Cost = (fixtures × material each) + (fixtures × hours each × labor rate). Sell price is derived from your target margin, and crew days show how long the work ties up your people.

What should I use for labor hours per fixture?

Use your own historical numbers where you have them. Many shops start from a rough per-fixture allowance and adjust by phase — rough-in usually consumes more hours than trim-out.

Is margin the same as markup?

No. Margin is profit as a percentage of the sell price; markup is profit as a percentage of cost. This calculator uses margin, so a 20% margin on $10,000 of cost sells for $12,500.
